List of Ingredients
1 T. plus 1 teas. oil, divided
½ c. chopped onion
2 garlic cloves, minced
2 c. thinly sliced zucchini
1 c. sliced mushrooms
½ c. diced red bell pepper
½ teas. basil
¼ teas. salt
¼ teas. pepper
4 eggs
½ cup Monterey Jack cheese, divided
Recipe
Preheat oven to 400F. In 12” skillet heat 1T. oil, add onion & garlic, sauté until onion is translucent. Ad zucchini, mushrooms, red pepper & seasonings. Stirring constantly sauté until vegetables are tender crisp, about 5 minutes; remove from heat. In medium bowl beat eggs; add 21/4 cup cheese and the sautéed vegetables & stir to combine. Grease an 8x8x2 inch baking dish with remaining teaspoon oil; transfer vegetable mixture to dish & sprinkle with remaining ¼ cup cheese. Bake 24 – 30 minutes ( until puffy & browned & a knife inserted in center comes out clean).
