    1 cup Bisquick
    1/2 cup Parmesan cheese
    1/2 cup onion, finely chopped
    1/2 cup oil
    1/2 tsp salt
    2 eggs, beaten
    ADD:
    3 cups zucchini, finely sliced

    Recipe



    Mix well.
    Bake in a 1 1/2 or 2 qt casserole at 350º for 1 hour, or until top is browned. Cut into squares to serve.

    The original poster uses a 1 1/2 oval casserole. I don't have one, and was afraid it might not get done in the middle in my square dish, so I used the 2 qt square.
    Also, I changed the order of the mixed ingredients so my 1/2 cup wouldn't be oily when I measured the cheese and onion.
