    List of Ingredients




    4 cups zucchini, unpeeled
    1 onion, sauteed
    2 eggs, well beaten
    1 cup salad dressing (or half dressing and half sour cream)
    1/4 chopped green pepper (optional)
    1 cup grated Parmesan cheese
    salt and pepper to taste
    1 tbsp minced fresh parsley
    1 tbsp minced fresh lemon basil
    1.4 tsp garlic powder

    Recipe



    Cube and cook unpeeled zucchini in water, drain. Beat the eggs well and add the salad dressing, green peppers, cheese, parsley, basil, garlic powder, and salt and pepper. Mix and fold in zucchini and onion. Bake in a 1 and ½ quart casserole. Cover with buttered bread crumbs. Bake a 350 degrees for 30 minutes or until bubbly
