    List of Ingredients




    2 tsp butter
    4 skinless, boneless chicken breasts
    1 lb sliced mushrooms
    1/2 cup water or white wine
    1/2 can whole berry cranberry sauce
    generous pinches salt and freshly ground pepper

    Recipe



    Melt butter in a large frying pan over high heat. Add chicken. Cook until golden brown, 3 - 4 minutes per side. Remove to a large plate. Add the mushrooms and water to the pan. Stir often until the mushrooms start to soften, about 3 - 4 minutes. Stir in the cranberry sauce, salt and pepper. Stir often until the sauce has melted. Reduce the heat to medium low. Return chicken to the pan. Cover and cook, stirring and turning occasionally. Until the chicken is springy when pressed, about 8 - 10 minutes.

    This is good with a handful of fresh cranberries added after the sauce has melted and some grated orange peel just adds that little extra.


    Another thing I sometimes add to make it just a little different is add timmed mandarin oranges. The colour is great and oranges and cranberries are a match made in heaven.
