    KISS THE COOK CHICKEN FETTICINI
    I created this recipe by combining the best parts of several different recipes. This is a delicious recipe that can be on the table in 30 minutes and will have your guests wanting to kiss the cook.

    List of Ingredients




    12 ounces uncooked pasta (fetticini or bowties)
    5 Tablespoons butter, divided
    3 Tablespoon cooking oil (canola)
    flour and garlic pepper for dredging chicken
    1 ½ - 2 pounds boneless, skinless chicken breasts – cut into bite size pieces
    8 ounces fresh mushrooms
    1 teaspoon minced fresh parsley
    2 cups chicken broth
    1 teaspoon cornstarch mixed with ¼ cup water or broth
    ¼ cup freshly minced green onion tops (garnish)
    Freshly grated Parmesan cheese (to taste as garnish)

    Cook pasta in salted water to al dente. Drain and set aside. In a bowl, place flour for coating the chicken. Sprinkle garlic pepper over the chicken pieces. Dredge the chicken in the flour; shake off excess flour. In a large skillet*, heat oil and 3 Tablespoons butter until butter is melted. Over high heat brown the chicken for approximately 2 minutes per side. Remove chicken from the pan and set aside. Add the mushrooms to the same pan chicken was cooked in. (Add more butter if needed.) Saute the mushrooms until golden brown. Add the 2 cups of chicken broth to the mushrooms and let simmer for 5 minutes, covered. Add the chicken to the mushrooms and broth; add additional 2 Tablespoons of butter and let simmer for another 2 –3 minutes. Add the ¼ cup water/broth mixed with cornstarch and stir. Bring back to a boil.
    This will very slightly thicken the sauce so that it will adhere to the pasta better; it will NOT be thick. Add hot pasta to the pan; stir to mix well. Place in a large Pasta Bowl and sprinkle with green onion tops and freshly grated Parmesan cheese. Serve immediately. Have extra Parmesan cheese available for those that would like it.
