    Libby's Stuffed Green Peppers

    Libby's recipe from friendly freezer.. It is GOOD


    List of Ingredients




    10 medium green peppers

    BEEF MIXTURE
    1 onion -- chopped
    1 1/8 cups Minute Rice -- uncooked
    2 3/4 pounds ground chuck
    2 eggs
    2 teaspoons Italian seasoning
    1/2 teaspoon garlic powder
    1 1/2 teaspoons chili powder
    Salt and pepper -- to taste
    2 tablespoons parsley flakes
    1/2 cup tomato mixture -- recipe follows

    TOMATO MIXTURE
    16 ounces tomato sauce
    1 can tomato soup
    1/2 teaspoon garlic powder
    2 teaspoons Italian seasoning

    Recipe



    Combine ground beef, rice, onion, eggs and seasonings as you might for
    meat loaf. Combine ingredients for tomato mixture in a medium bowl.
    Remove tops from green peppers and take out seeds and membrane. Stuff
    peppers firmly with the meat mixture.

    To cook immediately, place in greased baking dish, about an inch space
    between peppers. Bake at 350 degrees for 45 minutes or until meat is
    Done and peppers tender. Baste occasionally with sauce.

    To freeze, pack stuffed peppers tightly into a baking dish and place in the freezer for 1 1/2 to 2 hours (without sauce). When frozen, package in the number necessary to feed your family, and divide the sauce among the peppers. Thaw overnight in refrigerator. Place in baking dish as directed above and bake for 45 minutes to 1 hour, or until meat is done and peppers are tender.

    Note: I froze singly in 1 quart freezer bags. To cook these, I just

    The last time I made these, I did in sweet red peppers (cut in half
    lengthwise as they were so big). Tasty!
