    List of Ingredients




    1 tablespoon olive oil
    1 cup chopped onions
    2 cloves garlic, minced
    1 pound of cooked meat (leftovers are great), ground or regular
    1/2 teaspoon black pepper, or to taste
    1 teaspoon salt, or to taste
    Any other spices that you’d like (I added some marjoram and thyme)
    1 cup cooked carrots
    1 cup gravy/broth/au jus (I used McCormick’s Hunter Sauce Mix, prepared)
    2 to 3 large potatoes, boiled and mashed, prepared according to taste (I add milk, butter, salt and pepper)

    I used ground turkey and prepared everything fresh (using leftovers would have been great, but I did not have any). Nonetheless, this was a relatively quick dish to prepare; the casserole was ready for the oven in about 45 minutes (maybe less) and cooked for about 20 to 30 minutes. I served a salad and bread along with it. The leftovers heated up great in the microwave, too!


    Preheat oven to 350ºF.

    In a large skillet, heat olive oil and sauté onion and garlic until onion is translucent. If you are using ground meat and it is not cooked yet, add the meat to the onion mixture and brown. If using other, non-ground leftover cooked meat, cut into bite-size pieces and warm in the skillet with the cooked onions and garlic. Add salt and pepper and other spices, if desired, to meat mixture. Remove skillet from heat and fold in the cooked carrots and stir in gravy. Place the mixture into a casserole dish and top evenly with the prepared mashed potatoes. Cook, uncovered, until heated through and bubbly and the potatoes are browned a bit.
