    Posted by: Aquablue_OH This one is very easy. My mom used to double or triple it..she made it in a roaster. Remember to let it sit for 15 min or so so the rice thickens up. Good time to get the veggies done and rolls...salad etc

    List of Ingredients




    1 pkg Uncle Ben's Wild Rice (not instant)
    4-8 chicken breasts (I use BNLS/SKNLS)
    1 can Crm Mushroom Soup
    1 can Crm Celery Soup
    1 envelope dried onion soup (optional) (I use this)
    2 cups water (use soup cans)
    1 lg. can mushrooms (optional)

    Recipe



    Empty package of rice on bottom of Dutch oven, or small roaster, with lid.
    Place raw chicken on top of rice.
    Mix soups, water, mushrooms (optional), and season packet from rice together, then pour over chicken.

    Cover tightly. Bake 2 1/2 hours at 350. DO NOT REMOVE LID WHILE COOKING!!! (You'll destroy the vacuum if you do and the chicken will not bake through.) If tripling the recipe, I think I would add a 1/2 hour to the cooking time....

    After removing from oven, let sit approx 15 min to thicken. I serve w/salad and french bread. Sometimes w/green beans or other veggie...

    I accidentally added too much water one time...so I cut up the chicken into bite-sized pieces, changed the plates to bowls and had a great Chicken and Wild Rice Soup
