    List of Ingredients




    1 pkg.(two sausages) Eckrich® Smoked Sausage
    1 med. onion, sliced
    1/2 cup diced green pepper
    2 Tbs Trade East® Cajun Seasoning(more or less to taste)
    1 Tbs garlic powder
    1 28 oz. can Hunts® Diced Tomatoes
    1 14.5 oz. can Hunts® Diced Tomatoes with Basil, Garlic and Oregano
    2 15 oz.cans dark red beans
    2 tsp Lawry's® Seasoned Salt(more or less to taste)
    4-5 cups cooked rice(depends on how juicy you like your red beans and rice)

    Recipe



    Cut the sausage lengthwise and then into bite sized pieces. Put them with the cans of tomatoes, onion, green pepper, garlic powder and cajun seasoning into a 6 qt. dutch oven. Cook over medium heat until the sausage starts to shrink(give up it's juice) and the onion and green pepper are tender, approx. 1/2 hour.
    Add the beans and rice and stir together. Season with Lawry's Seasoned Salt to taste and heat through. Serve.

    I like to serve this with cornbread.
