My first time making a pineapple casserole to go with Easter ham, I debated long & hard about the casseroles with the cheese and Ritz crackers, but with cheesey hashbrown casserole, I thought this one might work better. My family was quite skeptical, but everyone took some and they LOVED it!!! Huge hit! Thank you, dear Vell!!! And I'm reposting for the 3rd year for newbies and anyone who might have missed it! (My changes at bottom)

    "Our favorite pineapple casserole does not have cheese. This is good as either a side dish with ham or as dessert with a dash of cinnamon and a splash of whipped cream

    List of Ingredients




    3/4 C. butter at room temperature
    1 1/2 C. sugar
    3 eggs
    1 (20 oz) can crushed pineapple,
    drained
    1 TBSP lemon juice (fresh or bottled)
    4 C. cubed white bread

    Recipe



    Preheat oven to 350. Butter a 2 quart baking dish.

    Cream butter with sugar in a large bowl until smooth. Add eggs, beating well after adding. Stir in the pineapple and lemon juice. Fold the bread in gently and pour into your buttered dish. Bake for 40-45 minutes or until the top is lightly browned.

    Ellen's notes: Next time, I will use 1 stick of butter and 1 cup of sugar, and shred my bread in my mini chopper to make it finer. YUM!!!
