    Serves 4-6

    4 boneless chicken breast halves
    1 tesp seasoning salt
    8 slices bacon, cut in half (save bacon fat)
    Sauce: (I suggest doubling this)
    1/2 cup honey
    1/3 cup (was1/2) prepared mustard
    1/4 cup mayo
    1/4 cup corn syrup

    2-3 Tbsp bacon fat (or vegetable oil)
    2 cup (was 1 c) sliced mushrooms
    2 tesp parsley
    1 Tbsp dried onion flakes
    2 cups combined Colby & Mont. Jack cheese

    Pound breast to 1/2” thick. Rub with seasoning salt; cover & chill 30 minutes. Preheat oven to 350. Fry bacon until crisp. Remove, save fat & set aside. Leave in about 1 Tbsp bacon fat & lightly saute mushrooms; remove & set aside. In med. bowl combine mustard, honey, corn syrup, mayo & dried onion flakes. Take half of this to serve later. Heat 2 Tbsp bacon fat in skillet on med; saute breasts 3-5 mins per side or browned. Put little honey mustard sauce in bottom of 9x13” baking dish & spread around. Apply the remaining honey mustard sauce to top of each breast then layer tops of each breast with mushrooms & bacon slices. Sprinkle tops with grated cheese. Bake for 15 mins or until cheese melts & chicken juices run clear. Serve with reserved honey mustard sauce, warmed.

    This is great as leftovers (makes 2 full meals for the 2 of us) but need to increase the sauce ingredients. I put about 1 cup chicken broth in small skillet, add leftover breasts, cover & heat on low a few mins., then adding saved sauce & stir in to blend well (add more broth if needed for consistency) It will moisten the breasts nicely. Serve over leftover rice.
