    List of Ingredients





    Cook the following meats together until no longer pink, stirring to break up. Drain all fat.
    1 pound each: ground beef, ground pork, ground veal, and ground chicken

    Add the following to the meats and cook just until tender:
    1/2 cup chopped celery
    2 chopped onions
    2 chopped cloves of garlic
    1/2 cup chopped bell pepper
    8 oz. chopped fresh mushrooms

    Combine the following ingredients and sprinkle over the meat mixture. Stir well.
    2 tablespoons flour
    4 tablespoons chili powder,hot or
    mild
    1 tablespoon salt
    1/2 teaspoon dry mustard
    1 teaspoon black pepper
    1 pkg. taco seasoning, hot or mild
    1/4 teaspoon ground red pepper
    1 pkg. dry onion soup mix

    Add the following ingredients and stir well. Bring to a boil, then turn to simmer for 30 to 45 minutes, stirring occasionally to prevent scorching:
    1/4 teaspoon Tabasco
    1/2 cup catsup
    4 oz. can chopped green chilies
    No. 2 can stewed tomatoes
    30 oz. can diced tomatoes
    30 oz. can crushed tomatoes
    2 no. 2 cans kidney beans, drained
    No. 2 can small red beans, drained
    No. 2 can pinto beans, drained No. 2 can Great Northern beans

    Add the following ingredients and stir well. Bring to a boil, then turn to simmer for 30 to 45 minutes, stirring occasionally to prevent scorching:

    Serve chili with the following toppings: shredded cheddar cheese, sour cream, and green onions.

    If anyone desires a hotter chili, pass ground red pepper to add at the table. The addition of any other pepper with a more distinctive taste will change the flavor of the chili.
    Makes 25 to 30 servings. Freezes well.
