    List of Ingredients




    3 tablespoons cumin
    Pinch of sea salt
    Pinch of oregano
    1/2 teaspoon hot dry mustard
    1 1/2 whole garlic bulbs
    12 ounces tomato sauce
    12 ounces whole canned tomatoes
    3 Ortega green chilies
    1/2 ounce tequila
    12 ounces beer
    4 white whole onions

    10 pounds coarsely ground beef or lean brisket
    2 pounds fresh ground pork
    2 bottles (1.7 each) Mexican chili powder
    2 beef bouillon cubes
    1/2 teaspoon brown sugar
    4 teaspoons oil

    Dash of Saigon Cinnamon

    Recipe



    Chop onions, garlic and chilies finely. Chop brisket or loosely put in Fresh ground beef and fresh ground pork, brown it with onions in 4 Teaspoons oil.

    When meat is LIGHTLY pink add rest of ingredients. Simmer 3 hours
    Stirring occasional. DO NOT STIR THE LAST 30 MINUTES. COVER AND LET
    SIMMER.

    Chipotle Sauce

    1 small can (7-ounce) chipotle peppers in adobe sauce
    2 14.5-ounce cans chopped tomatoes (not stewed tomatoes with peppers and
    Onions)
    2 tablespoons olive oil
    1/2 cup minced fresh cilantro

    Combine all ingredients and purée in a blender or food processor.

    I added almost a quart to the chili -- it was 10 pounds of beef and 2
    pounds of pork. This was the best chili I've ever fixed, it worked with my recipe perfectly :) Thank you John!!

    Serving Ideas: serve with spaghetti and ground cheese.

    Serve with Fritos and cheese.

    Top with sour cream, fresh chopped green onions and shredded cheese.
