    Recipe created by my DS and really is prize winning...3 out of 4 contests at his work.


    List of Ingredients




    5 lbs ground round
    3 poblano peppers (about ¾ lb)
    10 jalapeno peppers (about ½ lb)
    5 large onions (about 2 ½ lbs)
    2 15 oz cans pinto beans
    2 28 oz cans crushed tomatoes in puree
    1 10 oz can Rotel tomatoes
    1 can beef consommé
    1 12 oz can tomato paste
    1 head/bulb garlic
    1 ½ oz chili powder
    3 T ground cumin
    5-6 t Italian seasoning
    3 t Cavender’s seasoning
    6 heaping t cocoa powder
    2-3 t sugar
    Tabasco to taste
    Salt and black pepper

    Recipe



    Wash peppers and remove ribs and seeds. Dice into ¼ to ½ inch pieces. Roughly chop onions. Chop garlic. Place garlic, onions and peppers in sprayed pan with a little water, salt and pepper and cook gently until peppers become soft. Brown meat in 3 batches using 1 T cumin, 1 t Cavenders, and 1-2 t Italian seasoning per batch. Drain grease if any. Put browned meat into large pan with onion, peppers and garlic. Add chili powder and remaining ingredients. Cook at a simmer for about an hour. Taste and correct seasonings as needed. Cool and refrigerate. Freezes well. Tastes better after flavors meld while sitting overnight.
