    List of Ingredients




    Preheat oven to 350 degrees

    CRUST
    1 1/4c flour
    1/2c butter, softened
    1/4c powder sugar
    1/2 tsp vanilla
    FILLING
    1c granulated sugar
    2 eggs
    1/3c lemon juice ( I use a little less, cause I don't like them too tart and lemony)
    2Tbsp flour
    powder sugar

    (Make sure butter is soft, not melted. It won't make the same results)

    Recipe



    Combine all crust ingredients in small bowl. Beat at low speed 2 to 3 minutes until mixture is crumbly. (will be dry coarse crumbs) Press onto bottom of 8 inch square baking pan. Bake 15 to 20 minutes, but no more, or until edges are slightly browned.

    Combine all filling ingredients, while crust is baking, in a small bowl EXECEPT powder sugar. Beat at low speed until well mixed and frothy.

    Pour filling over hot crust. Continue baking 15 to 18 minutes or until filling is set. Remove from oven and sprinkle with powder sugar. cool completely. Cut into bars; and sprinkle with more powder sugar.

    makes about 16 bars.

    Easy and Good.

    My friend made them with lime juice one time and orange juice concentrate the next time. Lime ones had a bite to them, but orange ones were good. She has also made them as vanilla bars, by increasing the vanilla to 1tsp and adding 1/8c water for the lemon juice (otherwise they are thick.)
