    Recipe Introduction

    List of Ingredients

    2 1/4 cup all-purpose flour, divided
    2/3 cup confectioners' sugar
    1 teaspoon baking powder, divided
1 cup (2 sticks) butter, softened (I used real butter)
    5 large eggs
    2 cups sugar
1/2 cup fresh lime juice (I used regular limes, but I guess key limes would be best although I don't see how they could get much better!!)

    Recipe

Preheat oven to 350. Lightly grease a 13x9x2 inch baking dish.
In a medium bown, combine 2 cups flour, confectioners' sugar and 1/2 teaspoon baking powder. Cut in butter with a pastry blender until mixture resembles coarse crumbs. Press mixture into prepared baking dish. Bake 20-25 minutes, or until lightly browned.
In a medium bowl, combine eggs, sugar, juice, 1/4 cup flour and 1/2 teaspoon baking powder. Pour over hot crust. Bake 22-25 mintues or until lightly browned. I sifted a little powdered sugar on top of them.

    Makes about 2 dozen bars
