    Cookie Crust

    Ingredients:

    2 1/2 cups all-purpose flour
    1 cup cold butter, cut into pieces
    1/2 cup granulated white sugar
    1/2 teaspoon salt

    Pre-heat oven to 350°F. Lightly grease bottom and sides of a 9" x 13" X 2" baking pan. Prepare the crust:

    Mix ingredients until mixture resembles fine crumbs, press into pan and bake at 350°F for 25 to 30 minutes or until golden brown. Top with pecan filling and proceed.

    Pecan Pie Filling

    Ingredients:

    4 large eggs
    1 cup light Karo corn syrup
    1/2 cup dark Karo corn syrup
    1 1/2 cups granulated white sugar
    3 Tablespoons butter, melted
    1 1/2 teaspoons pure vanilla extract
    2 1/2 cups Georgia pecan pieces

    While the crust is baking, beat eggs, corn syrups, sugar, butter and vanilla until well-blended. Stir in pecans, pour over hot crust, spread to cover. Bake for 25 minutes (took me 38 minutes in our oven) or until the filling is firm at the edges. Cool completely, and cut into 2 1/2" bars.

    Makes 42 bars
