You can use shortening with great success.
These were the first cookies I ever made
35 years ago and I am still making them!
You can use a hand mixer to cream the shortening
and sugars, but the batter gets quite stiff
as you add the flour and oats. I then use a
wooden spoon.
List of Ingredients
2 cups lard or shortening
2 cups sugar
2 cups brown sugar, firmly packed
4 eggs
2 tsp. vanilla
3 cups flour
2 tsp. salt
2 tsp. soda
6 cups uncooked quick oatmeal
2 cups nuts, optional(I never use them)
Recipe
Sift flour, salt, and soda. Set aside. In an extra large
mixing bowl, cream shortening
and sugars; mix in eggs and vanilla. Fold in flour
mixture, making sure all is mixed in. Stir in oats
(and nuts), 2 cups at a time until all blended. For
uniform cookies, roll in balls of desired size or use
cookie scoop; place on lightly greased cookie sheet or
parchment paper. Flatten slightly criss-cross fashion
with fork dipped in water. Bake at 350 for 10-13 minutes.
The longer they bake, the crispier they will be.
You will need to monitor first batch to bake to desired chewiness
