    List of Ingredients




    2 1/4 C. all purpose flour
    1/2 tsp. baking powder
    1/2 tsp. salt
    1 C. butter, softened
    3/4 C. sugar
    1 egg
    2 TBSP. fresh lemon peel, grated, and divided
    1 tsp. vanilla
    Additional Sugar for the tops of the cookies
    1 cup powdered sugar
    4-5 tsp. fresh lemon juice

    Preheat oven to 375 degrees.

    Combine flour, baking powder, and salt in a small bowl. Beat butter and sugar in a large bowl with an electric mixer at medium speed until light and fluffy. Beat in egg, 1 TBSP. lemon peel and vanilla till well blended. Gradually beat in flour mixture on low speed till blended. Drop by level 1/4 cupfuls onto ungreased cookie sheets, spacing 3 inches apart. Flatten dough until 3 inches in diameter with bottom of glass that has been dipped in additional sugar. Bake 12-14 minutes or until cookies are just set and edges are golden brown. Cool on cookie sheets for 2 minutes, then transfer to wire racks to cool completely.

    Combine powdered sugar, lemon juice and remaining lemon peel in a samll bowl. Drizzle mixture over cookies. Let stand until icing is set. Makes about 1 dozen 4" cookies.

    CINBARRA'S NOTES:
    I made a double batch of these, and did not make them as big, so I got 3 dozen. I also used 2 TBSP. of King Arthur's signature thickener as I wanted soft cookies. These are fast, easy and VERY delicious. If you are a lemon lover, these are for you!!
