Posted by: lainiea*********Here's my contribution. It is from a Pillsbury cookbook (the ones you buy at the grocery checkout). These are just the best tasting cookies and I get raves from everyone who tastes them, including the teachers at school. I made some for them before Christmas and they were thrilled as I have made them and taken them to school several times. They just love them! I have had to print up and copy this recipe for so many people, so am happy to post it here for those of you who are interested. They are very light-tasting and easy to make.
List of Ingredients
1 c shortening (I use Crisco Butter-flavoured)
1/2 c sugar
1/2 c firmly packed brown sugar
1/2 tsp vanilla
1 egg
2 c all-purpose flour
1/2 tsp baking soda
1/2 tsp salt

1/4 c sugar
Recipe
Heat oven to 350F. In bowl, beat shortening, 1/2 c sugar and brown sugar until light and fluffy. Add vanilla and egg; beat well. Lightly spoon flour into measuring cup; level off. Stir in flour, baking soda and salt; mix well. Shape dough into 3/4" balls. Place 2" apart on ungreased cookie sheets; flatten balls to 1/8" thickness with bottom of glass dipped in 1/4 c sugar.
Bake for 7-11 minutes or until light golden brown. Cool 1 minute, remove from cookie sheets. Makes approx 5 dozen cookies.
EXTRA HINT: I sprinkle a little coloured sugar on top of flattened cookies before baking if making at holiday times
