    This is one of our favorites T&T.
    You don't even need a mixer. Just use a large enough saucepan and stir with a wooden spoon right in the pan.


    List of Ingredients




    3/4 cup butter
    3/4 cup semisweet chocolate chips
    1 1/2 tablespoons instant coffee powder
    1 cup + 2 TBS. sugar
    1 cup + 2 TBS. packed brown sugar
    3 *beaten* eggs
    1 TBS. vanilla
    3 cups all-purpose flour
    1/2 cup unsweetened cocoa powder
    3/4 teaspoon baking powder
    1/4 teaspoon salt
    1 1/2 cups semisweet chocolate chips (12 oz. bag)

    Recipe



    In a *large* saucepan melt butter and the 3/4 cup chocolate chips over low heat. Remove from heat. Stir in coffee powder; cool 5 minutes. Stir in sugars, eggs, and vanilla. In a medium bowl combine flour, cocoa powder, baking powder, and salt. Stir into coffee mixture. Stir in the 1 1/2 cups chocolate chips. Roll in balls about the size of a walnut. Place on lightly greased cookie sheet. Bake in a 350° oven about 9-10 minutes or until set and they look shiney on the outside (DO NOT overbake). Let cool 1 minute before removing from sheet. Makes about 4 1/2-5 doz. cookies.
