    List of Ingredients




    ½ cup shortening
    1 cup sugar
    1 egg
    1 cup shredded zucchini
    2 cups flour
    1 tsp baking soda
    ½ tsp baking powder
    ½ tsp salt
    1 tsp cinnamon
    1/4 tsp cloves
    ½ tsp nutmeg
    1 tsp vanilla
    1 cup raisins

    Recipe



    Cream the sugar and shortening, add the egg and beat well. Stir in the shredded zucchini. Combine flour, soda, baking powder, spices and salt. Mix well. Add to zucchini mixture. Stir in the raisins. Drop rounded tsps 2" apart on greased cookie sheet. Bake at 375 degrees for 12 to 15 minutes. Cool 2 minutes and remove from pan. Makes 3 dozen cake like cookies. May chop raisins and also add nut meats if desired
