    List of Ingredients




    1 tablespoon olive oil
    1 onion, chopped
    1 pound leanest ground beef (7% fat is good)
    1 package taco seasoning
    1/4 cup water
    1 (15 1/4-ounce) can whole corn, rinsed and drained
    1 (14.5-ounce) can diced tomatoes (can use a Mexican flavored variety)
    1 (8.5-ounce) package corn muffin mix (such as Jiffy)
    3/4 cup (3 ounces) shredded Mexican cheese blend

    Recipe



    Heat oven to 400 degrees. Mist a 9-inch square baking pan with nonstick spray and set aside.

    Heat oil in 12-inch skillet and sauté onion until lightly browned, about 7 or so minutes. Add meat and sauté until cooked through, 5-7 minutes. Add taco seasoning and 1/4 cup water and cook for another minute or 2. Stir in corn and tomatoes and cook for another minute or 2.

    Prepare corn muffin mix as directed on package. Pour cooked meat mixture into prepared pan, and then spoon corn muffin batter over top. Use an offset spatula to spread it evenly over the top. Bake, uncovered, for 20 minutes. Remove from oven, top with cheese, and return to oven for 2-3 additional minutes, to melt cheese.

    Remove from oven, allow to set for 5 minutes or so, and serve.

    Serves 6.
