    6-8 chicken thighs (no bones/no skin)
    1 large onion, chopped
    1 clove garlic, minced
    1 teaspoon salt
    2 teaspoons paprika
    1/2 teaspoon ground ginger
    1/2 teaspoon chili powder
    2 cans (or one large) diced tomatoes
    1 pkg fresh mushrooms, sliced
    1/2 cup heavy cream
    Pasta - any kind, cooked

    Place chicken in crock-pot. Stir together remaining ingredients except cream and pasta and pour over chicken. Cover and cook on low for 8-10 hours or on high for 4-5 hours. Stir around and get chicken all broken up. Just before serving, stir in heavy cream. Serve over hot pasta.
    Serves: 6-8

    Heat oil and brown chickn thighs with skin on. After brown, take out chicken and put aside. In same oil saute onions. When translucent, add garlic and saute till fragrant. Add most of juice from canned tomatoes and deglaze the dutch oven. Add rest of ingredients (except the pasta and cream) and the chicken and simmer until done. About 30 minutes. I also add 1/2 C. of water w/1 tsp. of chicken granules.
