    List of Ingredients




    Makes 2 - 8x4 loafs

    1 cup butter, softened
    2 1/4 cups light brown sugar, firmly packed
    5 large eggs
    3 cups sifted all purpose flour
    1/2 tsp salt
    2 tsp baking powder
    3/4 cup buttermilk

    Recipe



    1. Preheat oven to 325. Grease and flour 2 8x4 pans. In medium bowl sift together the flour, baking powder and salt.

    2. Cream butter and sugars until very light and fluffy. Add eggs one at a time, beating well after each addition. Add flour mixture to batter alternately with buttermilk, beginning and ending with the flour mixture. Add vanilla.

    3. Fill prepared pan and bake for 1 hour or until toothpick inserted in center comes out clean. Cool cakes completely then remove from pans.
