makes 20 large slices
3 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup sweet butter or margarine, softened
2 1/2 cups granulated sugar
6 large eggs
1 cup lemon yogurt
1/2 tsp pure lemon extractRecipe
Do not preheat the oven. Grease and flour a 12 cup tube pan. sift together the dry ingredients and set aside.
In a large mixing bowl, beat the butter and sugar on low speed for 13 minutes until very creamy, scraping the sides of the bowl often with a spatula. Add the eggs one at a time, mixing for 1 minute after each addition. Add the dry ingredients in 3 additions alternately with the yogurt, scraping the bowl often and beating well after each addition. Add the lemon extract.
Pour the batter into the prepared pan. Place in a cold oven and set the oven temperature to 325º. Bake for 1 hour and 5 minutes, or until a cake tester inserted in the center of the cake comes out clean. Allow the cake to cool in the pan for about an hour. Place the cake on a cake rack and cool for 4 hours before serving.
