    List of Ingredients




    ½ cup butter or margarine, softened
    ½ cup shortening
    1 (8oz) package cream cheese, softened
    3 cups sugar
    6 large eggs
    3 cups all purpose flour
    1/4 teaspoon baking soda
    1/4 teaspoon salt
    1 (6oz) package frozen grated coconut, thawed
    1 teaspoon vanilla extract
    1 teaspoon coconut extract

    Recipe



    Beat first 3 ingredients at medium speed for 2 minutes or until soft and creamy; gradually add sugar, beating 5 to 7 minutes. Add eggs 1 at a time, beating just until yellow disappears. Combine flour, soda, and salt; add to butter mixture . Mix at low speed just until blended. Stir in coconut and flavorings. Pour into a greased and floured 10 inch Bundt or tube pan. Bake at 325 degrees for 1 hour and 30 minutes or until a wooden pick comes out clean. Cool in pan for 15 minutes. Remove and cool completely.
