    List of Ingredients




    Makes 25 slices

    3 cups all purpose flour
    3/4 tsp baking powder
    1/4 tsp salt
    1 cup sweet butter ( do not substitute margarine), softened
    1/2 cup solid vegetable shortening
    2 2/3 cups granulated sugar
    5 large eggs
    1 cup milk
    1 tsp pure vanilla extract
    1 tsp pure lemon extract

    Do not preheat the oven. Grease 12 cup tube pan and line the bottom with wax paper.
    Sift the dry ingredients together and set aside.
    In large mixing bowl, beat the butter, shortening, and sugar on low speed for 10 minutes. Add the eggs one at a time, blending well after each addition. Alternately add the dry ingredients and milk, mixing well. Add the vanilla and lemon extracts.
    Pour the batter into the prepared pan. Set the oven temperature to 350º and bake for 1 hour and 20 minutes, or until a cake tester inserted in the middle of the cake comes out clean. Allow the cake to cool in the pan for 1 hour. Remove to a cake rack and cool for at least 3 hours.
