    Makes 22 large slices

    3 1/2 cups all purpose flour
    2 tsp baking powder
    1/2 tsp salt
    1 cup sweet butter or margarine, softened
    2 cups granulated sugar
    6 large eggs
    1 cup evaporated milk
    2 tsp pure vanilla extract
    1 cup canned crushed pineapple, drained
    Confectioners' sugar for dusting (opt'l)

    Recipe



    Do not preheat the oven. Grease and flour a 12 cup tube pan.
    Sift together the flour, baking powder, and salt. Set aside.
    In a large mixing bowl, beat the butter and sugar on low speed until light and fluffy, about 10 minutes. Beat in the eggs one at a time, mixing for 1 minute after each addition. Alternately add the sifted dry ingredients and the milk, beating just until smooth. Add the vanilla extract. Fold in the drained pineapple.
    Pour the batter into the prepared pan and set the oven temperature to 350º. Bake for 1 hour, or until a cake tester inserted in the middle of the cake comes out clean. Cool the cake in the pan. Invert the cake onto a serving plate. For a finished look, dust the cake with sifted confectioners' sugar
