Shove It in the Oven Fried Chicken

    Source of Recipe

    Recipe Introduction

Alice's Cookbook (from The Brady Brunch) and it's called "Shove It in the Oven Fried Chicken". It's so good, you know it has to be fattening.

    List of Ingredients

    1/2 C butter
    1/2 C oil
    1 C flour
    1 tsp. salt
    2 tsp. cayenne pepper
    1 tsp. garlic salt
    1/2 tsp. pepper
    2 3lb. broiler-fryers, cleaned and sectioned

    Recipe

In a large baking pan, melt butter and oil in oven. In a medium bowl, mix together flour, salt, cayenne pepper, garlic salt and pepper. Coat the chicken pieces with the flour mixture. Place the chicken skin-side down in the melted butter. Bake at 350 degrees for 30 minutes. Turn over and cook 30 minutes longer or until the thickest pieces are fork tender.

    Serves 6 to 8

My notes: I use cajun seasoning instead of the cayenne pepper and substitute the garlic salt with garlic powder. I also tend to add more pepper, as I'm a pepper freak. I also use a package of chicken thighs or leg quarters as there's just 2 of us.
