1 cup self rising meal
1/8 teaspoon ground red pepper
1 teaspoon Mrs. Dash Italian Medley
1/4 teaspoon black pepper
1 cup minced green onions
1 egg, beaten (or egg substitute)1/3 cup buttermilk
2 tablespoons oil (I use Enova.)Recipe
Preheat oven to 425°. Combine meal, seasonings, and onions in a mixing bowl. In another bowl mix egg with milk and oil. Add to dry mixture and mix just until moistened evenly. Spray mini-muffin tins with cooking spray. Place 1 tablespoon of batter in each well. Bake until golden brown, about 18 to 20 minutes. Makes about 18 to 20 hushpuppies. If desired, you may drop the batter into the pan with a cookie scoop for slightly larger hushpuppies
