    List of Ingredients




    1 cup sugar
    1 tsp cinnamon
    6 tart cooking apples ( I use granny smith), about 1 1/2 lbs, sliced
    1 cup all purpose flour
    1 tsp baking powder
    1/8 tsp salt
    1/4 cup milk
    1/4 cup oil
    1 egg
    1 tsp vanilla

    Recipe



    Preheat the oven to 350F. In a medium bowl, stir together the sugar and cinnamon. Spoon out 1/2 cup of this mixture and toss with the apples. Place apples in a 8 inch sqare baking pan. (a cake pan will do fine) Add the remaining sugar mixture to the flour, baking powder, and salt. Stir to combine. In a bowl, beat together the milk, oil, egg, and vanilla. Add the milk mixture to the flour mixture, and stir until smooth. Spoon batter evernly over the apples in the pan. Gently spread the batter with a spatula, but don't worry if the batter doesn't touch the edge of the dish or cover all the apples. Bake for 30 to 35 minutes, or until the apples are bubbling and the top springs back when lightly pressed in the center. Cool in the pan on a wire rack. Serve warm with a scoop of vanilla ice cream or whipped cream.
