    Microwave Eggless Date and Walnut Cake

    List of Ingredients




    12 dates, pitted and chopped (1/2 cup soft baking dates (paste)
    1 1/4 cup milk (soy) plus 1/4 cup orange juice)
    3/4 cup oil (1/2 cup almond oil)
    3/4 cup powdered sugar (equivalent amount in stevia powder)
    1 cup all-purpose flour (white whole wheat)
    1 tsp. baking soda
    12 walnuts, chopped

    Recipe



    1. Boil the milk in a saucepan. Remove from heat. (didn't need to do with the date paste)
    2. Add the dates and let it stand until cool.
    3. When cool put into a blender or food processor and process or blend until the dates are ground. (blend until smooth)
    4. Add the oil into blender/food processor and blend/process again until incorporated and mixture becomes thick. Add sugar to the mixture in the blender/food processor and blend until incorporated. (I then added baking soda and blended until incorporated)
    5. Transfer mixture to a mixing bowl. Sift flour and baking soda well. Fold in the flour until it is mixed well (I whisked in). Add chopped walnuts.

    Note: You can at this point add a little more milk in case you find the batter a little thick. The batter should be of pouring consistency like most cake batters. (I added 1/4 cup orange juice)

    6. Pour batter into a greased glass microwavable dish. (9" pie plate or 9" sq.)
    7. Place in microwave and bake for 10 to 11 minutes on High. (10 minutes, rotated dish once)

    Serve cake warm or cold with chilled Vanilla Custard or Ice Cream for a dessert version of this cake.

    Makes 8 servings.


    I used 2% milk I forgot to tell you. I still can not believe it baked so well in microwave and without the eggs.
    I think we can experiment with this cake too (you and I already did tweaked it) and use the cinnamon, vanilla and the speculaas (spices) or pumpkin and cocoa spices too
