    Posted by: TriainAtlanta *******This one may not be that quick but it is the best caramel icing I have
    ever had and it, too, is addictive. Very unique!

    List of Ingredients




    1 tsp. baking soda
    1 cup buttermilk
    2 cups white granulated sugar
    1/2 cup unsalted butter
    1 tsp. pure vanilla
    can also add few drops of almond extract and/or nuts - pecans are
    good.

    Recipe



    Dissolve soda in buttermilk and cook slowly w/ sugar and butter. Cook
    until thermometer reaches soft ball stage (forgot number). It takes a while
    and you need to watch it carefully, and stir occasionally. It turns a
    caramel color.
    Cool and add flavoring and some nuts, if desired.
    Beat until thick and creamy. This sets up fast and it is best
    served/poured on a sheet cake. It is really delicious and tastes like
    caramel fudge!
