    by Countrycook***********This is a wonderful frosting/filling for cakes or cup cakes~ It is so reminiscent of the filling used in Whoppie Pie. Its a perfect cloud of lightness, creaminess and just enough sweetness~ Pillow Soft and I an only imagine the beautiful peaks this one will make on any cake of your choice~ The recipe is from ToH and was part of a Chocolate Cup Cake with Cream Filling recipe

    List of Ingredients




    2 Tbs cornstarch
    1 cup of cold water
    1 cup of soft butter
    1 cup of sugar
    1/2 tsp almond extract (I used 1/4 tsp. plus 1/2 tsp. lemon extract)

    Recipe



    Boil the water and cornstarch together and cook till thick. About 2 minutes. Refrigerate 1 hour. Beat the butter and sugar till light and fluffy. Beat in the extract. Add the cooked and chilled cornstarch mixture and beat until the sugar has completely dissolved and the frosting is fluffy. About 4 minutes~ Store in the fridge.
    Makes about 3-1/4 cups.


    The mixture will separate slightly while beating. It will come together and does need that 4 minutes of mixing time. Light as a feather
