    List of Ingredients




    2 tsp. vanilla
    2 tsp. lime juice
    3/4 cup rum, I used spiced
    1 Tbps. browning, I used Kitchen Bouquet
    1 1/4lb. brown sugar
    1 1/2lb. butter, no substitutes
    6 eggs
    4c. mixed fruit, I used the deluxe glace mix
    3/4c. fine bread crumbs
    3c. flour
    1 tsp. baking powder
    1/4 tsp. salt
    1/2c. chopped nuts

    Recipe



    Line a baking tin with brown paper and grease it. With a kitchen aid or other mixer beat butter, sugar, browning, vanilla and lime juice. Add eggs one at a time then by hand mix in flour, mixed fruit, bread crumbs, baking powder, salt and rum. Mix well and pour into baking tins, (3), Bake at 300ºF. for just over 2 hours.

    Best fruit type cake I have ever tasted. Make sure it hits the deep freeze fast because it will not last, we are on our second batch.
