    I will never make plain Jane meatballs again~` Though I did not make the Vodka sauce, I thoroughly enjoyed the meatballs with a wonderful gooey prize in the center. Very cool, very good

    List of Ingredients




    Ingredients for the Sauce:
    1 Tbs olive oil
    1/2 cup minced sweet onion
    4 cloves of garlic, presses
    2(14.5 oz) cans of petite-cut tomatoes
    1 ( 6-oz) can of tomato paste
    1 grated large carrot
    2 Tbs finely chopped oregano or 2 tsp dried
    2 cups water
    1/4 cup vodka
    kosher salt and pepper to taste
    Saute the onion in the olive oil. Add the garlic,and saute for 1 minute
    Add the chopped tomatoes, tomato paste,grated carrot,oregano,water and vodka. Simmer till thick. Season with salt and pepper.

    Meatballs:
    Ingredients:
    1-1/2 pounds of ground beef( used a meatloaf mix)
    1/2 pound of italian style pork sausage
    2 extra large eggs, slightly beaten
    1/2 cup seasoned bread crumbs
    3 cloves of garlic, pressed
    1/2 cup minced sweet onion
    1 Tbs finely chopped fresh oregano or 1 tsp dried
    1-1/2 tsp kosher salt
    1/2 tsp black pepper
    Fresh mozzarella cheese( make 24-1" size ball using this cheese)
    1 Tbs finely chopped oregano
    Hot cooked pasta

    Lightly mix the beef, pork, eggs, bread crumbs, garlic, onions, oregano, salt and pepper. Do not overmix.Place about 2 Tbs( meat mixture) per ball in your hands
    Press a small mozzarella bal into the center and completely enclose into the meat mixture. Place on a foil lined jelly roll pan and bake for 25 minutes at 400. Place into the vodka sauce. Serve over hot cooked pasta.

    * Some of the cheese oozed through several meatballs. Next time I will freeze the mozerella cheese squares first before placing in to the meat. I also think that regular Mozzarella would work better
