    Meatballs-
    5 tbls. butter or margarine
    3 tbls. finely chopped onion
    3/4 light cream
    3/4 cup packaged dry bread crumbs
    1 1/2 lb. ground chuck
    1/2 lb ground pork
    2 eggs, slightly beaten
    2 teas. salt
    1/4 teas. pepper
    1/4 teas. allspice
    dash cloves

    Sauce
    2 tbls. flour
    1/2 cup light cream
    1 teas. salt
    dash pepper
    1/2 teas. bottled gravy seasoning
    Parsley sprigs (optional)

    Meatballs- melt 1 tbls. butter in skillet, saute onion 3 minutes, or until golden. In large bowl, combine cream, 3/4 cup water, meats, eggs, salt, pepper, allspice and cloves, toss lightly to mix well. With teaspoon, shape into 75 meatballs, about 3/4 inch in diameter. In 2 tbls. hot butter in same skillet, saute meatballs, a few at a time, until browned on all sides. Add more butter as needed. Remove meatballs, and set aside.
    Make Sauce- Remove all but 2 tbls. drippings from skillet. Stir in flour suntil smooth. Gradually stir in cream and 1 1/2 cups water, bring to boiling, stirring. Add salt, pepper and gravy seasoning. Add meatballs, heat gently 5 minutes, or until heated through. Serve garnish with parsley. Serves 6 to 8

    We love these little meatballs. The mixture is very moist and I add some bread crumbs to the meat mixture to help in shaping. When making meatballs keep your hands moist with water, this makes shaping a lot easier. I always double the sauce because it is so...good. If you try this I hope you like these as much as we do.
