    List of Ingredients




    2 eggs
    1 cup milk
    3/4 cup quick-cooking oatmeal
    1/2 cup chopped onion
    1/2 cup shredded carrot
    1 cup shredded mozarella or cheddar cheese ( I have used both, with great results )
    1/2 tsp each, basil, thyme and sage
    a sprinkling of garlic powder
    a sprinkling of salt free seasoning
    a sprinkling of black pepper
    1-1/2 lb lean ground chuck

    Topping:

    1/2 cup ketchup
    1/3 cup brown sugar
    1 tsp prepared mustard

    In a large bowl, beat eggs. Add milk, oatmeal, onions, carrot, cheese and spices and seasoning. Add meat, mix thoroughly.

    Place in loaf pan or whatever you want to use. Bake at 350 degrees for 45 min.

    Combine the topping ingredients: spoon some over meat. Bake for about 30 min. longer or until done*.
    Let stand 10 minutes before serving.
    Use rest of topping to serve over each slice. (If you make the lil loaves, it only takes about 45 min for the full cooking time.)

    *Mine didn't require the last full 30 min. I take it out of the oven when it starts to pull away from the sides of the dish and tests at 170 degrees with a meat thermometer.

    The first time I made the Best-Ever Meat Loaf, I had a chatter box talking to me and mis-read the instructions about the topping. I put it on when I first put it in the oven and it came out fine.

    Good luck and enjoy. I have numerous meat loaf recipes as this is dh's favorite, but I won't ever be making anything else from now on. It is a firm, without being a "brick" and moist enuf not to fall apart.
