will first post the original recipe. I made it approximately 1/5 the size of the original more or less. I have been experimenting with glaze recipes. If you have had cracker barrels meatloaf, if is wonderful. But it is made in a convection oven, which I do not have. I started to make it in the crockpot, but it was taking too long, so I transferred it from the crockpot to an oven pan. Next time I will just bake it at 350 for 1 to 1 1/2 hours. It was very, very good and my SIL really liked it also. I loved the glaze. It was not quite as tender as cracker barrels, but it is still yummy.
List of Ingredients
10 pounds ground beef
30 ounces onions in 1/4" dice
1 pound diced green bell peppers
10 eggs
5 tablespoons salt
1 1/2 tablespoons freshly-ground black pepper
1 1/2 quarts diced canned tomatoes
2 1/4 cups grated biscuit crumbs
Recipe
Place all in large bowl, mix completely with gloved hand. Place in 3 loaf pans. Press down with spoon. Bake at 300 degrees in convection oven for 60 minutes.
Remove from oven and invert each loaf over 8-inch wire rack to drain grease and juice. Spread 1/2 cup of catsup over each loaf. Cut into portions 5 to 6 ounces each and keep warm.
This recipe yields 42 (5-oz) servings

Downsized Cracker Barrel Meatloaf
2 lb. ground chuck (lean ground beef or ground round would also be fine)
1 small to medium onion, diced
3/8 c. diced Bell peppers (anything between 1/4 and 1/2 cup would be fine)
2 t. salt
1 t. black pepper
1 grated reduced fat Biscuit (I used one of the perfect portions ones)
2 eggs
I just realized I was supposed to have put canned tomatoes in there and I didn't (oops).--if using it would be 1/5 of 1 1/2 quarts (I probably would just try either 1 cup or about half of one of the smaller cans)
Anyway mix it all together. It probably would make 1 large loaf or two smaller loaves. Mine kind of fell apart when I removed it from the crockpot, but it filled most of an 8 inch square pan.
Glaze:
1/4 c. catsup
1/4 c. packed brown sugar
1 T. spicy brown mustard
Combine and put over meatloaf. Bake at 350 for 1 to 1 1/2 hours or until done. I drained off the crease. I like to use meatloaf pans that automatically drain into a second pan as they cook, but my SIL has that pan.
