    Stove Top Meatloaf

    Stove top meatloaf.
    Take your favorite meatloaf recipe, shape it into a mound. Chop up a can or two of tomatoes in the blender, pour into a Dutch oven or large saucepan, depending on the size of the meatloaf, place the meatloaf in the juice, and cook it on top of the stove. I often put fresh garlic in the tomato juice, and then when the meatloaf is cooked, you can serve the juice over rice or mashed potatoes. You could probably use canned tomato juice or even V-8 juice. This is great for warm weather when you don't want to turn on the oven but you are hungry for meatloaf.
