I've been using the white wheat flour instead of unbleached flour in most of my recipes that call for all purpose flour. It is great. The brand I found was King Arthurs but the store quit carrying it here. I found an online souce that is excellent. Anyone else use white whole wheat flour? Is there another brand of white whole wheat flour you like?

The shipping is reasonable considering what the shipping rates are these days (I hate to pay shipping) but the product is excellent. I ordered a 50 lb bag ($15 for the flour about $24 shipping!) to last until I could find another store that will stock it close by. I guess I could buy Sara Lee White Wheat
King Arthur's white whole wheat flour is not bleached. The package states it is milled from a milder "sweeter" white winter wheat

I was in Krogers today and they have KA white whole wheat if you have a Krogers maybe they have it if not I bet they would get it for you
I have been using white wheat flour for a while now. I get the berries from a Menonite store, and grind my wheat. It's delicious. We like it much better than the red wheat flour
I went to the Menonite store where I purchase all my baking needs, and bought some lecithin. I made a loaf of wheat bread today and added 1 Tblsp. lecithin. The bread turned out fantastic!!
The owner said it lightens up whole grain bread. When you have a coarse grain it is not like fine flour, and will want to fall apart and be crumbly. The lecithin is a natural preservative and it will also give you a softer crust. I also add 2 Tbls. gluten to give it consistency
lecithin is also good for your brain, brain food.
I don't have any at home, so I'll have to pick some up and add it to my whole wheat bread. Thanks for the tip.
