    List of Ingredients




    2 cups flour
    1 tablespoon baking powder
    1 teaspoon salt
    1/2 teaspoon nutmeg
    1 cup chopped walnuts
    1/2 cup diced dried fruit bits
    2 teaspoons lemon peel
    2/3 cup granulated sugar
    2 eggs
    1/2 cup milk
    1/3 cup cooking oil
    1 cup packed chopped zucchini
    1/2 cup powdered sugar
    2 to 3 teaspoons lemon juice

    Sift together flour, baking powder, salt and nutmeg into large bowl; fold in walnuts, fruit bits and lemon peel until well coated. Set aside.

    In small bowl, beat sugar, eggs, milk and oil until creamy. Add zucchini. Pour over dry mixture and stir until all is moist and well mixed. Spoon into 12 greased and floured or paper-lined muffin tin cups.
    Bake at 400 degrees F for 20 to 25 minutes or it tests done.

    While muffins are baking, combine powdered sugar and lemon juice, making a thin glaze; drizzle over muffins as soon as the are removed from oven. Let stand in pan for 15
    minutes; remove from pan and cool completely.
