    1 1/2 cups flour (we used all whole wheat pastry)
    1 cup whole wheat flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    combine thoroughly

    1 cup buttermilk, sour milk or plain yogurt.
    3/4 cup brown sugar (used 1/2 cup)
    1/2 cup oil
    1 egg
    In separate bowl mix well. Stir in dry ingredients until just moistned

    1 1/2 cups rhubarb diced
    1/2 cup nuts toasted and chopped (opt) didn't use first time may next time
    Stir in and fill greased muffin tins 2/3 full

    topping- we omitted and added cinnamon to muffin batter
    1/4 cup sugar
    1 tbsp butter- melted
    1 tsp gd cinnamon
    1 tsp flour
    combine and sprinkle on top of batter. Bake in preheated oven of 375º for about 20 min or till done. Remove from pans and cool
    Says it makes 12, we got 15.
