1 1/2 cups flour (we used all whole wheat pastry)
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
combine thoroughly
1 cup buttermilk, sour milk or plain yogurt.
3/4 cup brown sugar (used 1/2 cup)
1/2 cup oil
1 egg
In separate bowl mix well. Stir in dry ingredients until just moistned
1 1/2 cups rhubarb diced
1/2 cup nuts toasted and chopped (opt) didn't use first time may next time
Stir in and fill greased muffin tins 2/3 full
topping- we omitted and added cinnamon to muffin batter
1/4 cup sugar
1 tbsp butter- melted
1 tsp gd cinnamon
1 tsp flour
combine and sprinkle on top of batter. Bake in preheated oven of 375� for about 20 min or till done. Remove from pans and cool
Says it makes 12, we got 15.
