    1 1/2 cups All-purpose flour
    1 1/2 cups ground flaxseed
    3/4 cup brown sugar
    1 Tbs. Baking powder
    3/4 tsp. nutmeg
    1 1/2 tsp. cinnamon
    2 cups milk
    1 egg

    Recipe



    Preheat oven to 350 degrees. Spray muffin pan with cooking spray or use pan liners. I beat the egg, Add the milk, and then all the dry ingredients which i have mixed thoroughly in a seperate bowl. Mix just until all ingredients are wet. Fill until 3/4 full.
    NOTE: This recipe says it makes 12, but i find even when filling cups almost full i get 15. And i enjoy 1-2 every morning now. Bon Appetit` from The Ocasional Cook

    I made these on the weekend for myself as I have been told I need to eat flax seed. The only change I made was to add about 1 1/2 cups of raisins. These are very dense muffins and the taste is excellent.

    I made the 12 muffins, but will probably spread it a bit farther the next time.I used paper liners in my muffin pans. Next time, I will spray the pans as it is very hard to get the paper off these muffins.

    I highly recommend these muffins to anyone, and especially to those needing to comsume flax seed. (I bought a coffee grinder to do my flax seed. Works a treat!)
