    List of Ingredients




    Muffins
    1 3/4 C flour
    1/3 C firmly packed brown sugar
    2 t baking powder
    1 1/2 t ground cinnamon
    3/4 t baking soda
    1/4 t salt
    1/2 c sour cream
    1/2 c milk
    1/4 c butter, melted
    1/4 C apple jelly, melted
    1 egg
    2 C (about 5 med) peeled, shredded carrots

    Topping
    2 T apple jelly melted

    Recipe



    Heat oven to 375. Combine flour, brown sugar, baking powder, cinnamon, baking soda and salt in med bowl; set aside. Combine all remaining muffin ingredients except carrots in large bowl. Stir in carrots. Batter will be thick. Spoon batter into 12 paper lined muffin cups. Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean. Immediately brush with melted jelly. Cook 5 minutes before removing from pan.

    The apple jelly gives a hint of sweetness to these tender cinnamon carrot muffins.
