    List of Ingredients




    1 lb. ground beef
    1 medium onion, chopped
    2 garlic cloves, minced
    4 oz. Monterey Jack cheese, shredded
    4 oz. Cheddar Cheese, shredded
    1 can refried beans
    1 4.5 oz can chopped green chiles, drained
    1/2 c. salsa (you choose - hot or mild)
    12 (8 inch) flour tortillas

    Recipe



    Cook first 3 ingredients in until beef is no longer pink. Drain

    Stir in refried beans, chiles, and picante sauce. Stir well. Then carefully
    fold in the cheese,
    stir till slightly blended in, not melted.

    Place 1/4 cup mixture just below center of each tortilla. Fold opposite sides of
    tortillas over
    filling, forming rectangles. Secure with toothpicks.

    Place on a baking sheet and coat chimichangas with cooking spray. Bake at 425°F
    for 8 minutes;
    turn chimichangas over and bake 5 minutes more. Remove picks and serve
    immediately with any extra
    shredded cheese and other toppings (sour cream, salsa, guacamole, etc)

    Remove toothpicks before serving.
