    List of Ingredients




    2-3 pound chuck roast
    1 small bag dried pinto beans(soaked overnight)
    2 TBS. chili powder
    1 TBS. cumin powder
    1 TBS. salt
    1 TBS. dried oregano
    1 TBS. minced garlic
    1 can chopped green chilies

    Recipe



    Put everything in crock pot and cover with water. Cook in large crockpot for 6-8 hours. If it is for lunch what I do is get up early start the crockpot and then go back to bed for a while.

    When you get home shred the beef. It will be very tender and usually will break apart with just a wooden spoon. Stir and within 15 minutes it will thicken and be ready to serve.

    Serve the chalupa over a bed of fritos and top with chopped tomatoes, green onions, lettuce, sour cream, ect. Eat with a fork. (or you could serve it with tortillas)
