HEARTY BEEF ENCHILADAS

List of Ingredients
1 lb. ground beef
1 medium onion, chopped
1 can (15 ½ oz.) chili beans, undrained
1 can (10 oz.) enchilada sauce, divided
½ cup salsa, divided
8 flour tortillas
1 cup shredded cheddar cheese
1/4 cup sliced ripe olives, drained
Cook beef & onions over medium heat until meat is no longer pink; drain. Stir in the beans, ½ can of enchilada sauce and ¼ cup salsa; set aside.
In skillet, heat 1/4 c. oil. Dip each tortilla in hot oil for 3 secondson each side or until just limp. Drain on paper towels.
Top each tortilla with 1/2 cup beef mixture. Roll up and place seam side down in 13x9x2 inch baking dish. Drizzle with remaining enchilada sauce and salsa. Sprinkle with cheese & olives. Bake uncovered at 350F for 25 minutes or until bubbly.

ENCHILADA SAUCE (makes 3 cups)
2 T. cooking oil
2 T. all-purpose flour
2 T. chili powder
1 tsp. ground cumin
1 can (14 oz. chicken broth)
1 can tomato sauce (8 oz.)
1 tsp. salt
1/4 tsp. garlic powder
Heat oil in large saucepan; stir in flour & chili powder. Cook for 1 minute then all remaining ingredients. Bring to boil & simmer for 10 min. Refrigerate extra.
