List of Ingredients
4-5 chicken breasts, cooked and shredded( used 4 thighs)
2 cups sour cream divided( used less)
2 cups cheddar or jack cheese divided( used less and used a Taco blend)
2 cups corn chips, slightly crushed( used less) Used scoops, crushed
2 cups of salsa, enchilada or taco sauce, divided( Kay used Vegtable salsa as that is what she had )
1 small onion, chopped
Chopped Lettuce and Chopped Tomatoes for the topping.
Recipe
Oven set at 350. Lightly grease 9x13" pan. Mix the shredded chicken with 1 cup each, sour cream, Cheddar cheese, corn chips, salsa and onion. Spread into the pan. Bake for 25-35 minutes. Layer in order given remaining sour cream, salsa, corn chips and cheese. return to the oven for 5 minutes or until the cheese melts. Just before serving top with the chopped lettuce and tomaotes.
I cut back on most of the ingredients as there is just the 2 of us and I only put the lettuce and tomato topping on 1/2 and left the other have as is incase I wanted to use the left overs in another recipe.
I also poached the chicken thighs in some taco spice mix. That added some additional flavor as well
